{Banana Pancakes & Sweet Champagne}

Happy Monday!! The weekend went by SO fast and I didn't do nearly as much as I had hoped! We DID manage to get to the Social Security Office to change my last name, take a walk with the crazy little dog and make homemade BANANA PANCAKES for dinner Saturday night! Ummm,.. these were AMAZING! Just look how yummy they are!!!!!
As you can see, I slaved away in the kitchen making breakfast for dinner!
Actually, I was pleasantly surprised at how easy it was to make pancakes from scratch!


INGREDIENTS:
1 cup all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil
2 ripe bananas, mashed





DIRECTIONS
Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.
Stir flour mixture into banana mixture; batter will be slightly lumpy. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.
I topped these with a bit of margarine, maple syrup, sliced banana pieces, whipped cream and chopped walnuts and served it up with a glass of pink champagne! Rest assured, we WILL be having these again SOON!

{Sunday Morning Cinnamon Buns}

I slept in a little late Sunday morning and when I finally got up and around (11am...YIKES) I decided I would make cinnamon buns for breakfast. As you can see, the process was a little more than opening a tube of buns, sticking them in the oven then slathering them in icing. These were virtually from scratch and they ended up being Sunday lunch... he he.

I am kind of lame and I don't even own a rolling pin.... BUT luckily I had this flat/skinny Old Spaghetti Warehouse glass from probably about 15 years ago :) It worked just fine.

YUMMMM,... ready for eating! They were DELISH! Tom said they were the best thing I ever made... not sure how I should take that now that I think about it.

On another note, I have enrolled in a six week, Intro to Digital SLR Photography course at a local community college. I CAN'T WAIT!! I have tried to sit down with my manual and just test things out, but I am a visual learner, I am better off if someone shows me!

Also, I just received two beautiful packages that contain lots of lovelies that will soon adorn the tops of some of my patchwork boxes! Stay tuned, I am going to take pictures of these sweet & colorful presents!
